This masterful organic olive oil from Istria is the Chiavalon family's ultimate premium all-rounder. The complex cuvée (blend) of the traditional olive varieties Buža, Rosignola, Morasola, Carbonazza, and Istrian Bianchera is cold-pressed immediately after the gentle harvest in October.
The intensely green oil captivates with a delicate yet distinct aroma of freshly cut grass, green apple, and wild chicory. This bouquet is refined by balsamic notes of rosemary, mint, sage, and a characteristic almond note. On the palate, it presents a pronounced yet wonderfully balanced pungency and bitterness.
